In the summer of 2017, Freshman Studies will take students to Costa Rica to explore food justice. This two-week immersive trip will be a culmination of a year-long engagement with the common theme. On the trip you will visit organic and non-organic farms and talk to farmers, see how bananas and coffee are harvested, go to a chocolate factory, and visit EARTH university (discussed in Where Am I Eating?). Students joining us on this trip will enroll in a CULF 1318 class in spring 2017 called Literature and the Power of Food. After students complete the spring course, they will continue learning in Costa Rica for two weeks in May.
