We asked Robert Fredericks, Director of Operations for Bon Appétit at St. Edward’s University, about their initiatives from sustainable service to sourcing local ingredients. For our first installment, learn how Bon Appétit is cutting back on waste and promoting composting in our cafes.
They offer reusable options. At our campus cafes, you’ll find reusable plates, utensils, and cups, that all help to cut back on waste. For those days you need to grab and go, try a reusable clamshell. After a one-time purchase, you can reuse your clamshell at campus cafes. Bon Appétit will take your dirty clamshell and swap it for a clean clamshell for your next visit.
They compost. In addition to composting their kitchen scraps, Bon Appétit provides visitors with composting, recycling, and landfill bins in all of their cafes. Toss your items in the correct bin on your way out to help reduce landfill waste.
