In late 2017, Texas Monthly barbecue editor Daniel Vaughn wrote about Mum Foods, co-owned by Environmental Science and Policy major Mattison Bills ’14. Vaughn called the company’s pastrami “the Platonic ideal of Texas pastrami.” Bills managed the St. Edward’s greenhouse before moving to Hawaii to make wood-fired pizza and then returning to Texas to open Mum Foods.
