Mike Smith, General Manager of Bon Appétit at St. Edward’s: You’ve given the green light to numerous sustainable practices and initiatives, such as the installation of composting facilities in Ragsdale, Hunt Hall, and the Huddle, and insisting on buying locally grown products as much as possible. Through your leadership, you consistently encourage the campus community to make sustainable dining choices.
Kris Sloan, Associate Professor of Education: As a professor in the School of Education, you believe that the best was to “teach” sustainability is to model it. In the past you’ve been challenged to do more with less when it came to classroom resources and supplies, which led you to use recycling and upcycling techniques. You continue to keep paper towel tubes, aluminum foil, pieces of metal, and old plastic containers to use in class projects, which not only shows your students how important it is to find different ways to express themselves but models the fact that these are no-cost solutions. You went paperless five years ago, eliminating all paper handouts in your classes and relying on digital and online tools for everything that you can. Any paper that is used, you’ve either brought it in yourself or saved from a recycling bin. What’s most important about your sustainable choices is the fact that you’re as explicit as possible with them, explaining to your students why you’re making them and the impact that they have on the environment.
