Eco-Freindly Recipe: Black Bean Taquitos and Avocado Sauce

Many of our posts here on Generation Sustainable discuss why animal agriculture can be damaging to our environment. Just a couple of weeks ago, I shared my top tips for going vegan for the environment. However, even with this sage advice, it can be hard to figure out easy meals to make that does not include meat and dairy.

Never fear, dear reader! Below is my absolute favorite quick, easy and cheap weeknight meal that doesn’t pack a punch to the environment.

BLACK BEAN TAQUITOS & AVOCADO SAUCE

Prep Time: 5 mins

Cook Time: 15-30 mins

Total Time: 20-35 mins

Servings: 3 (12 taquitos)

Ingredients

Taquitos

  • 1 can black beans
  • 1/2 Tbsp cumin
  • 1/2 Tbsp paprika
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp garlic powder
  • Corn tortillas (12)
  • 1 Tbsp nutritional yeast (optional)

Avocado Sauce

  • 1 avocado
  • 1 Tbsp extra virgin olive oil
  • Juice of one lime
  • 1 teaspoon onion powder
  • 1 teaspoon yellow mustard
  • 1 Tbsp nutritional yeast (optional)
  • 1/2 cup water
  • Salt and pepper to taste

INSTRUCTIONS

Taquitos

  1. Preheat oven to 350-400 degrees. Line a baking sheet with parchment paper or aluminum foil.
  2. Drain black beans and add to blender. Add spices and nutritional yeast, and blend until smooth.
  3. Using a skillet warmed to medium-high heat, lightly warm the tortillas for a few seconds on each side until pliable. (Or wrap them in a damp towel and warm them in the microwave for 1-2 minutes.)
  4. Once all tortillas have been warmed, use a spoonful of the blended black beans to add a layer of beans onto each tortilla. Roll the tortillas into taquitos.
  5. Place each taquito close together on the baking tray so that they won’t burst. Cook for 20-35 mins until edges are lightly browned and crispy.

Avocado Sauce

  1. Add all ingredients to the blender.
  2. Blend until smooth.
  3. Chill in the fridge for 15-30 minutes while taquitos bake.

There you have it! Simple, quick and delicious. And coming in at under $5 to make, this meal is a fantastic bang for your buck. So go forth and make some eco-friendly taquitos.
