Our modern American food system – from production to processing to distribution to consumption to waste disposal – has caused serious environmental and social issues. In this class, we will examine the history and impacts of our industrialized system and explore what it means to have a sustainable food system. We will look at how the food that we eat affects our health, culture, and has broader consequences for society and the environment, exploring topics like food justice, local food movements, sustainable food production systems, and diet choice.
