Beer is one of the oldest drinks in the world. Created through the fermentation process, it is not just a food or drink, but a living, breathing consumable. Today, beer is seen as a staple through many parts of the world. In the United States, beer is found from football games to refined restaurants.
As a self-proclaimed beer connoisseur, I love trying new beers and exploring the unique taste that each brewery instills in their beer. While I have generally stuck to drinking my favorite beer, Michelob Ultra, since my time in Austin, I decided recently that I want to explore the local flavors of beer Austin has to offer. Through this project, I am hoping to discover my new favorite beer, and allow others to learn about the many wonderful breweries Austin has to offer.

The Process.
The brewing process is made up of three distinct phases. First, the hot side, which the grain is processed, boiled, and broken down. Next, the cold side, where fermentation, conditiong, and filtration occur. Last, the beer is packaged into cans.
-
Quality. Ecology. Tubing.
Unlike most breweries, Austin Beerworkers only package their beers in cans. The brewers believe canned beer recreates a similar quality as drinking out of a keg. Inside the cans their beer is less susceptible to degradation. Plus, the impact of recyclable cans on the environment is significantly less than bottles.

The Begining
Pierre Celis opened the first Celis Brewery on July 11th in 1992. His goal was to revive the wit beer style in his hometown of Hoegaarden. This photograph was taken in the gift shop at the Celis Brewery. In speing of 2011, Christine Celis lost her father Pierre Celis. However, she says Pierre's spirit and commitment to quality beer and his original yeast strain lives on.
-
A Story To Be Told.
Pierre Celis was born and raised in Belgium. He discovered his passion for brewing while living in Belgium. Pierre wanted to bring his specialty yeast strain to the United States to start a new brewery in Texas. In fact, he smuggled over his original yeast strain by concealing it in his tube socks. Pierres secret beer recipe was an immediate success in Texas. Though the original Celis Brewery shut down years later, exactly 25 years to the day it first opened, the Celis Brewery 2.0 opened in Austin, texas.

The Environment
The workers were very inviting and gave me a free beer for choosing their brewery to document. Also, I could tell they really cared about their customers because they allowed my friend to leave her car overnight since she didn’t feel comfortable driving.

German Brewery
The Brewtorium was the largest brewery I toured. They have both inside and outside seating as well as hidden rooms that are much more quiet. Those rooms are located in the long ass hallway leading you from the inside to the outside patio.
